APPLE & BRUSSELS SPROUT WALDORF SALAD
SERVES 4 PREP + COOK 45 MINS
• ¾ cup pearl barley
• 2½ cups water
• 200g brussels sprouts, shaved
• 1 celery heart, shaved, plus ¼ cup pale green celery leaves
• 3 baby red apples, sliced thinly
• 3 baby Corella pears, sliced thinly
• walnut halves, toasted
• ¼ cup fresh dill sprigs
