Puglia-inspired turnip top orecchiette ‘orecchiette con le cime di rapa

This simple dish is a staple in Puglia, using ‘cima di rape’ which are the abundant turnip tops. You can buy turnip tops over here from Ocado and local greengrocers, but if you can’t get your hands on any, purple sprouting broccoli works well too.

SERVES 2

• 300g turnip tops (or purple sprouting• 4 generous glugs of extra virgin olive oil• 2-3 anchovy fillets• 1-2 garlic cloves, crushed and chopped• ½ tsp chilli flakes (optional)• 200g orecchiette (or rigatoni)• 2-4 tbsp pecorino, shaved• Sea salt and black pepper
