Jamaican Beef Patties

FLAKY GOLDEN PASTRY folded around deeply seasoned ground meat, beef patties are a street food staple in Jamaica and other islands in the West Indies. These handheld meat pies are an evolution of the Cornish pasties brought by British colonizers, and they started appearing in Jamaican communities in New York in the 1960s. These days, mass-produced frozen patties are sold in supermarkets, though you can find many bakeries in the United States turning out scratch-made patties, too (see “50 Years of Flavor”).
