One-Bowl Baking

STRAWBERRY SKILLET CAKE

Makes 1 (10-inch) cake

This skillet cake will be a new staple in your kitchen thanks to the rich, fluffy frosting, irresistible drizzles of preserves, and fresh strawberries.

Cake:

2 cups all-purpose flour
1⅓ cups granulated sugar
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 cup unsalted butter, cubed and softened
⅔ cup whole buttermilk, room temperature and divided
2 large eggs, room temperature and divided
1½ teaspoons vanilla extract
1½ cups chopped fresh strawberries

Frosting:

¾ cup unsalted butter, softened
1 (8-ounce) package cream cheese, softened
¾ teaspoon almond or vanilla extract
3½ cups confectioners’ sugar
Garnish: sliced fresh strawberries, melted strawberry preserves
