Gruyère and Chive Grits Soufflés
MAKES 8 SERVINGS
2 tablespoons unsalted butter
¼ cup minced yellow onion
2 cups whole milk
1 teaspoon kosher salt
¼ teaspoon ground black pepper
½ cup plain yellow quick-cooking grits
1 cup shredded Gruyère cheese
2 tablespoons chopped fresh chives
4 large eggs, separated
1. Preheat oven to 425°. Lightly spray 8 (5-ounce) ramekins with cooking spray; place on a large rimmed baking sheet.
