BOUDIN-STUFFED TURKEY ROULADE

This simple and stunning Thanksgiving roulade is stuffed with boudin for a Cajun twist.

3 tablespoons unsalted butter, softened and divided
¼ cup finely chopped red onion
¼ cup finely chopped red bell pepper
4 cloves garlic, minced
½ pound boudin sausage, casings removed
1 teaspoon chopped fresh thyme
½ teaspoon Cajun seasoning
1 (2¾- to 3-pound) whole skin-on boneless turkey breast, trimmed (2 breasts)*
2¾ teaspoons kosher salt, divided
1½ teaspoons garlic powder
1½ teaspoons ground black pepper, divided
1 tablespoon vegetable oil
2 cups filtered apple cider
1 cup heavy whipping cream
1½ teaspoons chopped fresh sage
1 teaspoon apple cider vinegar
⅛ teaspoon cayenne pepper
