Rocket, Pear and Quickled Onion and Radish Salad
Serves 4
⅓ cup quinoa
150g wild rocket leaves or leafy greens
2 pears, thinly sliced on a mandoline
100g goat’s cheese seeds of 1 pomegranate
4 hard-boiled eggs, peeled
Quickled onion and radish
1 small red onion, thinly sliced on a mandoline
1 bunch of radishes, thinly sliced on a mandoline
1 cup apple cider vinegar
1 tsp each of mustard seeds,
