Kumara, Feta & Cherry Tomato Salad with Orange Pepper Dressing

This is a good picnic salad as nothing wilts, and it travels easily. 
Bright, gorgeous colours with a sharp citrusy dressing.

Serves 6 Prep Time 5–10 minutes

1 red or yellow kumara, peeled and diced into 1cm cubes
1 punnet red cherry tomatoes, cut in half
1 punnet yellow cherry tomatoes, cut in half
1 red capsicum, deseeded and diced
180g feta cheese, cut into 1cm cubes
2 oranges
1 teaspoon Dijon mustard
½ teaspoon salt freshly ground black pepper to taste (be quite generous)
¼ cup olive oil
2 teaspoons white wine vinegar
