Stuffed Peppadews

These bites are great as starters or as a tapa. There’s no cooking involved, so you can prepare them the day before your gathering.

Serves 6

Preparation time 20 minutes

YOU NEED

100g pine nuts
300g soft goat’s-milk cheese (chevin)
zest and juice of 2 lemons
2 tablespoons (30ml) fresh mint leaves, finely chopped
400g Peppadews
savoury biscuits for serving

THIS IS HOW

Toast the pine nuts in a dry pan until golden brown – keep an eye on them and stir or shake the pan every few seconds to prevent the pine nuts from turning too dark in colour.

Combine the goat’s-milk cheese, lemon zest and juice, mint leaves and pine nuts in a mixing bowl to form a smooth paste. Season to taste with sea salt and freshly ground black pepper.
