BEEF POTJIE WITH MAIZE SCONE DUMPLINGS Under the blanket…
The beer and prunes reduce into a thick, rich sauce… Yum.
Ingredients
(enough for 6)
4 strips bacon, finely chopped
2 onions, finely chopped
1 celery stalk, chopped
1,2 kg beef, cubed
¼ cup flour
olive oil
4 carrots, cubed
1 bay leaf
3 anchovy fillets
1 tin (410 g) chopped tomatoes
1 cup beef stock
½ cup dry prunes
330 ml stout (like Guinness)
Salt and black pepper to taste
FOR THE SCONE TOPPING
½ cup self-raising flour
½ cup polenta or maize meal a pinch of salt
50 g butter, cubed
1 egg, beaten
1 cup maize kernels (fresh or tinned)
2 tablespoons water
1 teaspoon Marmite
2 tablespoons boiling water
