Fig, haloumi and fresh za’atar leaves

SERVES 4 AS A STARTER

125ml light olive oil 500g haloumi cheese, cut into 8 thick slices cup honey 4 figs, halved lengthways ½ cup fresh za’atar leaves or oregano leaves 100g walnuts, lightly toasted

1 Heat the oil in a large frying pan over medium heat. Add the haloumi slices and cook for 2 minutes on each side, or until golden brown.

2 Remove any excess oil from the pan, leaving the haloumi in the pan, and add the honey. Increase the heat to high and allow the honey to reduce slightly. Add the figs and cook until warmed through.
