cauliflower, sultana and mango salad with lentils and turmeric, ginger and maple dressing

1 large cauliflower (500g trimmed weight in florets)6 tbsp olive oil1 tbsp ground coriander1 tbsp ground cumin1 tbsp fennel seeds1 tsp dried chilli flakes1 tbsp Demerara sugar2 red (bell) peppers, deseeded and cut into strips3 red onions, cut into wedges200g cherry tomatoes, halved400g can black lentils, drained and rinsed2-3 tbsp sultanas1 small, ripe mango, peeled, pitted and dicedbunch fresh coriander, roughly choppedsea salt and freshly ground black
