Corned beef is also delicious served cold and can be stored in the fridge for a week or two.

Spoon the hot mustard into sterilised jars and store in the fridge (unopened) for up to 2 months. Once opened, eat within 2 weeks.

1 onion, cut into wedges
2 carrots, cut into 2cm chunks
1 sprig parsley
2kg corned beef
