MINI STEAKS AND CHIPS WITH CHEAT’S BÉARNAISE
SERVES 15 READY IN 1 HR 30 MIN
1kg baby potatoes
2 tbsp sunflower oil
1,2-4kg rump steak, thickly sliced
For the Béarnaise sauce
1 bunch fresh tarragon, leaves removed and finely chopped
3 tbsp red wine vinegar
120g store-bought Béarnaise sauce (or hollandaise sauce)
125g crème fraîche
1 tsp mustard powder
1 Preheat the oven to 200°C.
In a large saucepan of cold water, bring the potatoes to the boil and simmer for 15-20 min, until cooked through. Remove, drain and halve. Toss in the oil
