Berries and Fairies Smoothie

Makes: 1 large glass

Make time: 3 mins

Equipment required: high-speed blender

1 frozen banana, cut into chunks

¼ cup frozen blueberries

¼ cup frozen blackcurrants

1 tbsp dried mulberries

1 tbsp almond butter

Small splash of vanilla extract

Splash of fresh lemon juice

Handful of ice

²⁄³ cup filtered water

1 tsp bee pollen (optional)

2 nasturtium or pansy flowers (optional)

This delicious immune-boosting smoothie is sweetened with one of the best wholefood sweeteners around – mulberries. This smoothie makes a great all-round breakfast drink, as it contains omega-3 fats from the blackcurrants as well as good amounts of iron, protein and vitamin C – all combined with the incredible immune-boosting properties of bee pollen.

Place all ingredients except bee pollen and flowers in a high-speed blender and blend until completely smooth, about 1 minute. Pour into a glass and garnish with bee pollen and flowers.

‘Tuna’ Temaki Roll

Makes: 4 rolls

Make time: 15 mins + aïoli

Soak time: 4–6 hours

Equipment required: food processor

Sunflower ‘Tuna’ (makes 1½ cups)

1 sheet nori

1 cup sunflower seeds, soaked for 4–6 hours

¼ cup sun-dried tomatoes, soaked for

2–4 hours

1 tsp capers

1 tsp caper brine

½ stalk celery, finely diced

1 shallot, finely diced

1 tbsp cold-pressed olive oil

1 tbsp lemon juice

¼ cup cashew aïoli (see recipe right) or store-bought vegan mayonnaise
