SATAY JACKFRUIT SKEWERS

Young jackfruit is such a versatile ingredient – it’s great as a sub for meat in curries, burgers, tacos and souvlaki. Here it steps in as a delicious plant-based alt to chicken. One bite of these and this dish will become one of your new faves!

SERVES 4

600g canned young jackfruit in water
Sea salt and freshly ground black pepper
1 large handful of coriander leaves
1 lime, cut into wedges

MARINADE

2 tbs melted coconut oil
Zest and juice of 2 limes
3 tbs coconut aminos
2 garlic cloves, finely diced
2cm piece of ginger, peeled and finely grated
1 tbs ground turmeric
1 tbs maple syrup or coconut nectar (optional)

SATAY DIPPING SAUCE

150g roasted peanuts
150g peanut butter
