TURKEY & SAGE MEATBALLS WITH CABBAGE & BROCCOLINI

PREP + COOK TIME 40 MINUTES (+ REFRIGERATION) SERVES 2

This recipe is gluten free.

175g lean minced turkey
⅓ cup (25g) fresh gluten–free multigrain breadcrumbs
1 large egg white (50g egg)
1 teaspoon grated lemon rind
½ teaspoon allspice
1 small onion (80g), grated coarsely
1 tablespoon chopped sage
2 tablespoons chopped flat–leaf parsley
olive–oil cooking spray
1 small leek (200g), halved, sliced thinly
1 medium pear (230g), sliced thinly
1 bunch broccolini (175g), trimmed
1 cup (80g) finely shredded red cabbage
½ teaspoon caraway seeds
6 small sage leaves, extra

Place turkey, breadcrumbs, egg white, lemon rind, allspice, onion, chopped sage and parsley in a medium bowl; mix well. Form mixture into six balls. Place on a tray; cover, refrigerate for 30 minutes (or freeze for 10 minutes)
