CRUSHED BROAD BEAN BRUSCHETTA
PREP + COOK TIME 35 mins SERVES 4
• 31/3 cups frozen broad beans
• 1 cup frozen baby peas
• 1/3 cup firmly packed mint leaves, shredded, plus extra, to serve
• 2 cloves garlic, crushed
• salt and black pepper
• 4 oval bread rolls
• 1/4 cup olive oil
• 1/2 cup white vinegar
• 8 cold eggs
• 180g feta cheese
• 100g semi-dried tomatoes in oil, drained, finely chopped
1 Place broad beans and peas in separate heatproof bowls; cover each with boiling water. Stand for 5 minutes; drain. Peel broad beans. Place broad beans and peas in a large bowl; mash coarsely with a potato masher. Stir in mint and garlic; season to taste.
Preheat grill to high. Split bread rolls in half. Brush cut side with half the oil. Place bread under grill, cut-side up, for 2 minutes or until lightly toasted. Turn,
