MEXICAN BEAN QUESADILLAS
Serves: 4 Prep Time: 15 mins
Ingredients
3 T oil
1 onion, finely chopped
1 clove garlic, chopped
1/2 red pepper, chopped
3 T tomato puree
1 tsp brown sugar
1/2 x 400 g can black bean, drained
1/2 x 400 g can red kidney beans, drained
1 x 210 g can corn kernel, drained
2 cups Gouda cheese, grated
4 soft tortillas
