350g (12oz) skinless, boneless chicken thighs, cut into bite-sized chunks
2 shallots, finely chopped
1 green pepper, finely sliced
100g (3½oz) chestnut mushrooms, sliced
1 garlic clove, crushed
3tbsp Thai green curry paste
400ml (14fl oz) can full-fat coconut milk, shaken
200ml (7fl oz) hot vegetable stock
1 stick lemongrass, lightly bashed
1 star anise
200g (7oz) pack of vermicelli rice noodles
