Cabbage and chorizo soup
Cabbage lightens up this soup, and it’s rich in vitamin K for bone and tissue health.
SERVES 4
✿ 400g (14oz) small potatoes, skins left on, thinly sliced
✿ 1 medium onion, peeled and sliced
✿ 1.5 litres (2¾pt) vegetable stock or water
✿ 200g (7oz) Savoy cabbage
✿ 225g (8oz) cooking chorizo, sliced
✿ Handful of fresh flat-leaf parsley
