MARINATED MACKEREL WITH SUMAC SALSA
Fatty fish like mackerel are loaded with omega-3 fatty acids, which have extensive heart-health benefits.
SERVES 6
✣ 6 very fresh small mackerel, left whole, gutted and cleaned
FOR THE MARINADE
✣ ½ small bunch of parsley, roughly chopped
✣ 3 cloves garlic, roughly chopped
✣ ¾tsp hot smoked paprika
✣ 1tsp cumin seeds, roughly crushed
✣ ½tsp ground ginger
✣ 2tbsp olive oil
✣ Juice and finely grated zest of 1 lemon

✣ 300g (10oz) cherry tomatoes, halved or quartered
