Glazed pork with udon noodles
SERVES 4 PREP AND COOK TIME 15 MINUTES
½ cup (125ml) malt vinegar
1 cup (220g) firmly packed brown sugar
2 teaspoons bottled crushed garlic
1 fresh small red Thai (serrano) chilli
1 tablespoon extra virgin olive oil
8 pork loin medallions (1kg)
270g packet fresh udon noodles
250g packet rainbow salad mix
¼ cup (60ml) Asian noodle dressing
1 cup (80g) snow pea tendrils
1 Combine the vinegar, sugar, garlic and chilli in a bowl.
2 Heat oil in a large frying pan over high heat. Cook pork for 2 minutes each side or until browned.
Pour over vinegar mixture, reduce heat; simmer,
