SUMMER ON A STICK

Watermelon & pomegranate granita

Ready in 40 minutes plus freezing time | Serves 6-8 | DF | GF

Combine flesh of ½ medium-sized watermelon (seeds removed) and 1 cup pomegranate juice in a blender, and process until smooth. Add 2 Tbsp lime juice and ¼ cup caster sugar and stir until sugar dissolves. Pour into a freezer-proof container and freeze for 2 hours, then scrape mixture with a fork to break into fine shavings. Refreeze for 2 hours before serving. Shave with the fork and scoop into glasses.
