Minty green-apple mojito with coconut & chilli edamame beans
Ready in 15 minutes | Serves 4 | DF | GF
DRINK
1 large green apple, unpeeled
10-12 mint leaves, torn, plus sprigs to garnish
8 lime wedges
1 Tbsp caster sugar
1 cup crushed ice cubes
200ml white rum
Soda water, to taste
NIBBLE
2 Tbsp coconut oil
1 Tbsp lemon zest (in longish strands)
