An American Sandwich in London

While growing up in Melbourne, Australia, Rebecca McGuinness couldn’t get enough of Kentucky Fried Chicken. And when she went vegan 12 years ago, her hankering for the crispy-on-the-outside, tender-on-the-inside staple of her youth did not dissipate. “I was determined to make a vegan version that lived up to the real thing,” McGuinness says. Fast-forward a decade, 10,000-plus miles, and countless hours of recipe testing, and she’s finally cracked the code.
