While growing up in Melbourne, Australia, Rebecca McGuinness couldn’t get enough of Kentucky Fried Chicken. And when she went vegan 12 years ago, her hankering for the crispy-on-the-outside, tender-on-the-inside staple of her youth did not dissipate. “I was determined to make a vegan version that lived up to the real thing,” McGuinness says.
