David Jones, who owns the Rigbye Arms in Wrightington in Lancashire, is on a mission to introduce people to game... and he’s succeeding.
The Rigbye Arms kitchen serves between 500-600 meals a week to its country inn and restaurant diners, and more than half of them are game dishes. The Rigbye Arms has a specific game menu on which there are at least seven starters and more than 10 main courses, all reasonably priced.
Some people come just for this menu. “Sometimes I will serve a whole table game, starters and mains,” said David, “while other tables will be a mixture, including vegetarians, who don’t seem to have a problem with game meat.”
David is a proud Lancastrian, from Wigan, who always wanted to be a chef, “or a deep sea fisherman”. He started shooting at the age of 16,
