WHAT YOU’LL NEED:
2 kg silverside beef
For the brine
½ cup red-wine vinegar
2 tbsp Worcestershire sauce
For the spice rub
cup brown sugar
2 tbsp coarse salt
1 tbsp bicarbonate of soda
½ cup coriander seeds, crushed
1 tbsp barbecue spice
1 tsp black pepper
