FESTIVE FEAST from “the real Downton Abbey”

SALMON EN CROUTE

Serves 6-8 Preparation time 20 minutes Cooking time 35-45 minutes, plus cooling

INGREDIENTS

• 20g/¾oz unsalted butter
• 3 banana shallots, peeled and finely chopped
• 400g/14oz prepared spinach
• Grated zest of 2 lemons (save 1 lemon, cut in half, for later use)
• Salt and freshly ground black pepper
• 1kg/2¼lb salmon fillet, skinned, pin boned and trimmed
• 500g block of puff pastry, thawed if frozen
• Flour, for dusting
• 1 egg, beaten
• 200g/7oz watercress, to serve (optional)

. Preheat the oven to 200°C, 400°F, Gas 6. Line a baking sheet with greasproof paper.
