Fragrant pork & broccoli stir-fry
Serves 4 (Pegan)
• 650g pork fillet, cut into strips• 2 cloves garlic, minced• 1 tsp fresh ginger, crushed• 2 tsp honey• 2 tbsp reduced salt soy sauce• 1 tbsp vegetable oil• 2 spring onions, sliced • 1 large red pepper, cut into strips• 100g sugar snap peas• 220g broccoli stems, blanched• extra spring onions & coriander to garnish
