Goulash potjie with roasted peppers

Serves about 6

Preparation time 25 minutes
Cooking time 2 hours 30 minutes

You need

2 red chillies (or to taste)
3 sweet peppers, different colours
2 tablespoons olive oil
200 g streaky bacon, chopped
1 kg beef chuck, in 3 cm cubes
¼ cup flour
1 big onion, chopped
4 cloves of garlic, finely chopped
1 tablespoon smoked paprika
1 tablespoon paprika
salt and pepper, to taste • 1 tin (410 g) chopped tomatoes
1 tablespoon tomato paste
1 cup beef stock
1 or 2 bay leaves
1 strip of lemon zest
2 tablespoons parsley, chopped

Here's how

Roast the chillies and sweet peppers over the coals (or under the oven’s grill) until charred on the outside and soft. Put the peppers in a container with an airtight lid
