AUSSIE FARE WITH A TWIST

ONE POT WONDER

Eating roo is more sustainable for the environment than other types of meat, given it requires no farming or land clearing. It tastes pretty good when it's cooked properly, too. With this in mind, we’ve put together a spicy roo recipe for your travels.

TOTAL TIME: 10 minutes or less SERVES: 4 (or 2 bigger serves)

INGREDIENTS

• 3 tbsp cooking oil• 500g kangaroo meat, diced• 1 tbsp of red curry paste• 400ml coconut milk• 500g sweet potato, chopped• 200g spring onions, diced• 250g of broccoli, chopped• 2 tsp fish sauce• Sugar• Lime• Rice and roasted peanuts, to serve
