GINGER-SPICED APPLE CAKE
Serves 8
450g apples, peeled, cored
1 cup caster sugar
Melted butter, for greasing
2¼ cups self-raising flour, plus extra for dusting
1 tsp ground ginger
1½ tsp cinnamon
¾ cup buttermilk
¼ cup golden syrup
125g melted unsalted butter
2 eggs
50g crystallised ginger, finely chopped, for garnish
Pouring cream, to serve
