APPLE + PISTACHIO PRALINE POP TART
For the dough:
• 2 cups plain flour
• 1 tbsp sugar
• 1 tsp salt
• 1 cup unsalted butter, cut into cubes
• 1 egg
• 2 tbsp milk
• 1 egg, lightly beaten for brushing pastry
For the apple filling:
• 2 medium apples
• 1/3 cup dark brown sugar, packed
• 1 1/2 tsp lemon juice
• 1/2 tsp ground cinnamon
• 1/2 tsp salt
For the icing:
• 3/4 cup icing sugar
• 2 tbsp reserved apple-cinnamon filling juices
• 2 tsp lemon juice
• 2 tsp milk, plus more as needed
For the praline (optional):
• 1/2 cup pistachios
• 1 1/2 cups caster sugar
1. To make the dough, place flour, sugar and salt into a food processor and pulse until combined.
2. Add butter and pulse until the mixture turns into pea-sized clumps.
3. Pour the mixture into a bowl.
4. Whisk the egg and milk together and then add them to the dough, mixing just until everything is well combined.
