Christmas shortbread biscuits

TAKES 50MIN, PLUS CHILLING TIME MAKES 24

150g plain flour25g ground rice125g firm butter, diced½tsp rose extract75g caster sugarSmall handful of unblanched almonds

TO DECORATEWhite icing, sprinkles, edible pearls and gold food colouring

1 Put the flour, rice and butter in a food processor and blend until the mixture resembles coarse breadcrumbs. Add the rose extract and sugar and blend to a firm paste. Wrap and chill for at least 30min.

2 Preheat the oven to 180°C/Fan 160°C/Gas 4. Grease two baking sheets. Roll out the dough on a floured surface to 5mm thickness. Cut out shapes and space slightly apart on the baking sheets (you could cut out stars from the middle
