Bitter chocolate tart
TAKES 55min, plus chilling and cooling SERVES 8-10
INGREDIENTS • Flour, for dusting • 300g all-butter shortcrust pastry • 1 egg yolk, lightly beaten • 100ml whole milk • 225ml double cream • 2tbsp caster sugar • 200g 70% dark chocolate • 100g milk chocolate • Large pinch of salt • 2 eggs • Cocoa powder, crushed pistachios and walnuts and ice cream to serve
1 Roll out the pastry to a 3mm thick disc on a lightly floured surface. Use it to line a 23cm tart tin. Prick the base and chill for 20min. Preheat the oven to 180ºC/Fan 160ºC/Gas 4.
