MOJITO SORBET
Preparation time 15 mins plus infusing
Freezing time 4 hours plus overnight
Makes 8
600ml water
100g caster sugar
5-6 limes, 2 zested, all juiced, plus extra wedges, to serve
50g fresh mint, leaves and stalks, plus extra leaves, to serve
¼ cup white rum, plus extra, to serve
1 free-range egg white, lightly beaten
Put water and sugar in a medium saucepan. Heat on low, stirring to dissolve sugar, then increase heat to high and bring to the boil. Add grated lime zest and mint, setting aside 5 leaves. Remove from heat. Cover pan and set aside for 10 minutes to infuse. Pour into a bowl and allow
