Black Rice Jewelled Salad

Dressing
½ cup Melrose Organic Extra Virgin Olive Oil
2 tbsp honey
2 tsp Melrose Organic Apple Cider Vinegar
Pinch salt flakes
⅓ cup flaked almonds
⅓ cup pumpkin seeds
500g cooked black rice, slightly cooled
2 cups fresh mint & parsley, roughly chopped
1 pomegranate, deseeded
To make dressing, place olive oil, honey, apple-cider vinegar and salt
