Pea, Pistachio & Herb Coconut Yoghurt Dip

150g frozen peas2 tbsp extra-virgin olive oilSalt & pepper, to taste500g Coco Tribe Natural Coconut YoghurtZest & juice 1 lemon1 clove garlic, crushed1 tbsp ground cumin80g pistachios, roasted, crushed½ bunch flat-leaf parsley leaves, finely chopped½ bunch mint leaves, finely chopped3 shallots, finely sliced2 tbsp2 tbsp cornichons, finely chopped1 clove garlic, crushed1 tbsp red wine vinegar1/3 cup extra-virgin olive oil½ small punnet baby herbs (optional)
