Parsnip is not a very popular vegetable and isn’t eaten as much as it once was. Most of us would consume parsnip occasionally, often as part of a roasted meal. With our ready access to carrots, potato and other starchy crops, parsnip has slipped from favour among roast vegies, but it can be used in many other ways to give it a new look including as a puree, mash, chips or in soup.
It was widely grown and used as a staple in Europe and the name crops up in ancient writings. Parsnip’s botanic name () reflects this, as the genus), while the species name means “cultivated”.
