ONE SUPER TUBER

I have a big bunch of homegrown parsnips. They were a gift from a gardening friend, Dean Sparrow, who has moved from his large garden of 18 years to a suburban rental (on the way to downsizing to a smaller property). The parsnips came with two hens and a box of potatoes.

The parsnips and spuds are headed for the oven for tonight’s dinner while the hens settle in to their new home in the garden.
