SHE'LL BE APPLES
If Scott Montague had his way we would buy apples by variety rather than whim. We’d know how to compare apples with apples and the difference between a tart (Granny Smith) and a sweet (Royal Gala) apple and know that there is such a thing as a tart sweet apple (Jazz) and how it is different from a sweet tart (Pink Lady) apple. We’d also buy apples according to their density and keeping qualities. On the flip side, apple growers would respond to consumer demands and not just put apples on the supermarket shelves and expect people to buy them, but actively respond to their needs and expectations of the ideal apple for salads, baking, desserts or just plain snacking.
