Nestled in an celtic tiger era car sales showroom, off the M1 motorway from Dublin to Belfast is a rather special distillery doing rather special things. The Cooney family's Boann Distillery has come to prominance of late with their vintage mashbill programme, as part of Fionnán O'Connor's Doctoral thesis on historic mashbills. After my visit, I see why Fionnán had as much success as he did with his vintage multi-grain mashes. The equipment the distiller's have at their disposal is some of the best in Ireland, from their mash conversion vessels for mashing unmalted grains to the floor of deep fermenters always on the bubble.
