INTRODUCTION
People often tell me that they cannot cook, and that is why they are left with no choice but to have fast food instead. I totally understand it. Cooking involves multidimensional efforts, right from selecting the appropriate cookware and cooking utensils, having the correct ingredients, and utilizing a proper heat source, to familiarizing and understanding the recipe, and tapping into all your five senses throughout the cooking process. Your eyes would be watching the colors shifting. The sound of bubbling water might be calling you to add the pasta in. Your nose could be detecting the aroma release. Touching a bread dough often tells you whether it has risen sufficiently. Of course, you have to taste it, multiple times in several cases.
We often take for granted about how much time and effort is involved in completing certain daily tasks. Even with a passion for cooking, repeating the same process several times a day, seven days a week, and 365 days a year can wear off the love for cooking quickly.
For me personally, variety is the key. Meal prepping the same dishes at the start of the week might save time, but it does not salvage my sanity. By making single portion of quick and enjoyable snacks or meals, I have finally reached my happy place. Here, I am sharing all that I’ve learned with you.

The recipes in this book are all about fun, flavor, and flexibility.
The ingredients listed under each recipe make a single portion of rice cake and are designed to be flexible and adaptable. Only specific sauces and cream bases have detailed suggested amounts. All other ingredients can be easily adjusted or substituted to suit your taste. Simply take the ingredient list as a culinary guideline and apply your personal preferences and imagination to the creative process.
The ingredients that are used in this book are compiled in the SHOPPING LIST for you. You probably already have most of the ingredients in your pantry, else, they are readily available in regular supermarket. You can find the less common food items by searching for the shopping list categories that those ingredients are under in the specialty section of a supermarket, or in specialty grocery stores.
Let us not forget the star of this book, the rice cake. The Unsalted Brown Rice Cake is used in all recipes. The unsalted version allows for both the savory and sweet recipes to shine. If you are using the salted version, be sure to balance the salty components in the recipe to suit your taste. The brown rice also adds nutritional values and its higher fiber content offers longer satiation.
