    Today was already one of the worst days of Tristan Bell’s career and it was barely five o’clock. At least he could be thankful that Toulouse, a restaurant, hadn’t actually closed. On the other hand, if it had closed it would have greatly reduced the amount of stress in Tristan’s life. That was one of the good things about not yet being head chef: all Tristan had to do was cook the food in front of him. No customers – and therefore no food – meant no worries. Any problems on a larger scale (such as, just for example, a meat delivery that was five hours overdue on the same day that the main freezer broke down) weren’t the responsibility of lowly line cooks like him. He could leave all of that in the stocky hands of Dominic Chapelle, current head chef here.

    Chapelle was in a foul mood, and so was reenforcing his authority by making the atmosphere in Toulouse’s kitchen even worse than it would have been otherwise. It was hard to tell, since he regularly threw screaming rage tantrums even on days when his four-star restaurant wasn’t in danger of shutting its doors right before the Friday dinner rush, but Tristan had worked with the man for long enough to detect such subtle shifts in his mood. Tristan just kept his head down and focused on prepping his mise – the collection of chopped vegetables, herbs, and sauces he’d be using throughout his shift – and tried to avoid being the lucky winner who drew Chapelle’s wrath. The small room was a loud, hot scene of chaos: people dashing back and forth, shouts, dropped bowls and knives, cuts of meat that should have been allowed to slowly defrost stuffed into the microwave, and various other crimes being committed against French haute cuisine.

    What the fuck is this? Right on cue, Chapelle exploded, his scratchy baritone voice momentarily drowning out the radio that was propped precariously above the sink playing reggaeton.

    Tristan knew that letting his curiosity show would just draw Chapelle’s attention down on him, but he couldn’t resist glancing over discreetly. One of the waiters, a short white girl named Becca, stared uncertainly back at Chapelle, clearly unsure if his question had been rhetorical or not. Chopped onions? she offered finally.

    Exactly! Chapelle shouted. "Didn’t I tell you to dice them?"

    Becca looked down at the pile of white onions on the cutting board in front of her, her confusion obvious. Isn’t that the same thing?

    Chapelle swore and yanked the knife from her hand, then shouldered her aside. Becca stumbled back a few steps and almost collided with the pot of beef stock Olivia, the sauce chef and Chapelle’s second in command, was in the middle of taking off the stove. Watch it! Olivia snapped, barely managing to keep the boiling liquid from spilling onto Becca.
