I have been perfecting this recipe for a while and believe I've finally got it right. I tested it on the front shoulder of a two-year-old Red just to be sure. It certainly got the thumbs-up from those who tried it.
This recipe is divided into four simple key tasks – however, you will need some specialist cooking equipment. It is a great dish to do in advance and is easy to serve, or equally good to do for a bulk catering trip,
