PISTACHIO & ORANGE CRUSTED LAMB MINI ROAST

Serves 3 Takes 55 minutes, plus resting

This mini lamb roast has a Middle Eastern twist, with a crust made from crushed pistachios, mint and oranges.

INGREDIENTS

• 1 x 400-450g/14oz-1lb lean lamb mini roast
• Salt and freshly ground black pepper

For the pistachio and orange crust

• Zest of 1 orange• 50g/2oz pistachio nut kernels, finely chopped• A large bunch of fresh flat-leaf parsley, finely chopped• A large bunch of fresh• 2 tbsp rapeseed oil
