Roasted cod with potatoes and herbs
Perfect for last-minute entertaining, this is ready in under an hour.

✱ 750g baby new potatoes, halved if large
✱ 1 large red onion, thinly sliced
✱ 400g cherry tomatoes
✱ 1tsp dried oregano
✱ 2tbsp olive oil
✱ 4 skinless cod loin fillets
