Grilled Garlic Scapes

long, spiraling curlicues of garlic scapes start to show up at farmers’ markets and in some grocery stores. These leggy stems come from the tops of hardneck garlic bulbs; by cutting off the scape, farmers encourage the plant to divert its energy and resources to feeding the underground garlic bulb. Scapes are beautiful and tasty—an elegant tangle of spring flavor.
