■ 3 sheets frozen puff pastry, thawed
■ 1 litre (4 cups) milk
■ 300ml tub thickened cream
■ ½ cup caster sugar
■ 1 tsp vanilla extract
■ 2 egg yolks
■ ½ cup custard powder
■ ¼ cup cornflour
■ 50g unsalted butter, chopped
PASSIONFRUIT ICING
■ 1½ cups icing sugar mixture, sifted
■ 2 tblsps passionfruit pulp
■ 2 tsps unsalted butter, softened
Grease a deep 20cm square cake pan.
